Vegetarian Times Recipe: Grilled Potato Salad

(Low-Fat Meals)

 

Grilled Potato Salad

 

Serves 10

 

If you've never grilled potatoes before, you're in for a real

treat. It is easier than you think and worth the effort.

 

Potatoes

3 lbs. small red potatoes, halved

1 cup thin green beans or haricot verts, cut into 3-inch

pieces and blanched

1?4 cup chopped fresh dill

1?2 cup crumbled goat cheese (optional)

 

Dressing

1?3 cup apple cider vinegar

1 Tbs. Dijon mustard

1?4 cup finely chopped shallots

2 tsp. grated lemon peel

2?3 cup olive oil

1 Tbs. finely chopped fresh flat-leaf parsley

 

 

 

1.. To make Potatoes: Place potatoes in steamer basket that

has been set in large saucepan. Steam over boiling water until just tender,

about 10 minutes. Remove steamer basket from water.

2.. Prepare charcoal grill or preheat gas grill to

medium-high heat. (Using a vegetable grilling rack will help keep potatoes from

slipping through grates.) Brush potatoes with a little olive oil and grill until

tender and tinged with brown, turning often, about 6 minutes.

3.. To make Dressing: In small bowl, whisk together vinegar,

mustard, shallots and lemon peel. Slowly whisk in oil until blended. Stir in

parsley.

4.. Transfer potatoes to shallow serving bowl. Add green

beans, dill and cheese if using. Pour 3?4 cup dressing over salad and toss to

coat. Season with salt and pepper to taste. Serve warm or at room temperature.

PER SERVING:

227 Calories

4g Protein

8g Total Fat (1G Saturated Fat)

38g Carbohydrates

5mg Sodium

Interesting what Vegetarian Times calls low-fat meals, eh? Have you tried

this one?

Because I see that you not only must brush the cooked potatoes with olive

oil before

grilling them (well, of course - I can see you'd have to!) but also put

2/3 cup of

olive oil in the dressing. Not very low fat, even divided by 10 people.

229 calories for a

small serving of potato salad - and 138 or thereabouts per serving from

the fat in the

dressing alone. That's an awfully high ratio of calories to fat.

 

I shall add this one to our OT non-slimming/special occasion recipes ;)

Now if

someone could come up with a truly low-fat version, woweeeeee! That'd be

yummy!

To reduce the fat in this recipe, I would grill them without the oil, and

for the dressing I would just put in a tablespoon of oil or reduced-fat

mayonnaise. If the dressing still needed something a bit more, I'd add some

veggie broth.

I know, i just thought it was funny that they called it low fat. :) I haven't

tried it yet. I'm kind of afraid to try new things with my allergies of corn,

onions, rye, spinach, molds -- yogurts and cheeses.

LOL Oh I see! I was a bit slow on the uptake then, wasn't it ;) OK, if you

haven't tried it, I'll

remove it from the Files - only 'Tried and True' recipes there!

 

Btw, I suppose what they MIGHT mean by LowFat is that it has no animal fat -

unless of

course one adds the optional cheese.

 

All those allergies to cramp your style :( Wheat too? (I can't remember.)
