It is easier than you think and worth the effort. Potatoes 3 lbs. small red potatoes, halved 1 cup thin green beans or haricot verts, cut into 3-inch pieces and blanched 1?4 cup chopped fresh dill 1?2 cup crumbled goat cheese (optional) Dressing 1?3 cup apple cider vinegar 1 Tbs. Dijon mustard 1?4 cup finely chopped shallots 2 tsp. grated lemon peel 2?3 cup olive oil 1 Tbs. finely chopped fresh flat-leaf parsley 1.. To make Potatoes: Place potatoes in steamer basket that has been set in large saucepan. Steam over boiling water until just tender, about 10 minutes. Remove steamer basket from water. 2.. Prepare charcoal grill or preheat gas grill to medium-high heat. (Using a vegetable grilling rack will help keep potatoes from slipping through grates.) Brush potatoes with a little olive oil and grill until tender and tinged with brown, turning often, about 6 minutes. 3.. To make Dressing: In small bowl, whisk together vinegar, mustard, shallots and lemon peel. Slowly whisk in oil until blended. Stir in parsley. 4.. Transfer potatoes to shallow serving bowl. Add green beans, dill and cheese if using. Pour 3?4 cup dressing over salad and toss to coat. Season with salt and pepper to taste. Serve warm or at room temperature. Because I see that you not only must brush the cooked potatoes with olive oil before grilling them (well, of course - I can see you'd have to!) but also put 2/3 cup of olive oil in the dressing. Not very low fat, even divided by 10 people. 229 calories for a small serving of potato salad - and 138 or thereabouts per serving from the fat in the dressing alone. That's an awfully high ratio of calories to fat. I shall add this one to our OT non-slimming/special occasion recipes Now if someone could come up with a truly low-fat version, woweeeeee! That'd be yummy! Guest guest Posted June 16, 2007 Report Share Posted June 16, 2007 To reduce the fat in this recipe, I would grill them without the oil, and for the dressing I would just put in a tablespoon of oil or reduced-fat mayonnaise. I was a bit slow on the uptake then, wasn't it OK, if you haven't tried it, I'll remove it from the Files - only 'Tried and True' recipes there! Btw, I suppose what they MIGHT mean by LowFat is that it has no animal fat - unless of course one adds the optional cheese. All those allergies to cramp your style Wheat too? (I can't remember.)
