For the last couple of weeks I have been having a large bowl of mixed salad leaves (200g/8oz), cherry tomatoes (150g/5oz approx) and a pat of goats cheese (100g/40z), topped with lots of black pepper. I am fine with the salad leaves and toms - but any ideas for a different topping? Much more in keeping with a low-fat slimming regime Whoops - or did you mean something instead of " topped with lots of black pepper " ? I think you can find low-fat recipes for salad dressings in our Files section. And I'm sure that there are people here with their own faves! I'll look around! (sometimes a little mayonnaise but very rarely), I don't drink milk so this is why I have been having the cheese - this way I am keeping my calcium levels up! Even with this as a lunch I am only getting through about 900 Kcals a day (according to most weight loss charts I should be on about 1300-1500 per day!) I love a salad w/ cottage cheese on it instead of dressing :0) I also mix 1 tsp olive oil, seasonings & a buncha vinegar over it too. LOL That's funny I use a little seasoned (or plain) rice vinegar, lemon juice, or balsamic vinegar (and sometimes a bit of a mix of my own devising, without oil). Otherwise, I grind on a mix of green, red, white and (a little - cuz I'm not fond of it) black peppercorns. The dark greens help with that, you know, but let's not go there right now. OK. It's just that when you wrote 'topping' I looked at the cheese and checked the fat and cholesterol contents of goat cheese (had to check, since I don't use dairy so can no longer remember), thinking you were trying to do lower fat. Depends on your height and activity level, of course, but unless you're short, like me, and not very active, they're probably right. There's a formula for calculating such things but it escapes me at the moment. Does anyone know? Good luck with it! Let us know how you're doing, okay? Also very filling to top with some cold garbonzo beans or any type you like, cold cooked asparagus is another favorite of mine. Balsamic vinegar or fresh lemon juice works for me most of time along with seasonings (do love good salad dressings but avoiding the oils right now) Another topping I love is black bean salsa on top of those veggies.
