Inside a Bean

Hi,

I make my beans from scratch all the time. Sometimes, I notice that the

inside of the bean is almost dry, and tasteless. Does anyone know what

that means? I made Roman beans today, and I would have thrown it all

out, except it is part of tonight's dinner.

Thanks,

Probably too old. How long did you soak them?

Yesterday, I used a quick pre-soak method. Boil for two minutes.

Remove from heat. And then, cover and soak for more than an hour. I've

had the same experience with beans that I've pre-soaked overnight.

I thought old beans were always wrinkled. These looked good, but

tasted terrible.

I've never had much luck with quick pre-soak. Sometime you can revive old

beans by soaking a day or two, changing the water a few times, but not

always.

If you can sprout them, they are okay. If they won't sprout, they are too

old.
