We always had rhubarb growing in the garden when I was a kid and I remember eating it raw while dipping it into a cup of sugar. But now I want to try a healthier recipe. I've done the usual google searches using low fat and fat free and I still find recipes with lots of sugar. I'd love to find a low fat rhubarb crisp recipe. Does anyone know of one they can post here? Or post a link to a recipe online? I don't particularly want to stew it or make muffins. I can add other fruit to the recipe. I usually still put some sugar, but most of the sweetening with stevia. You might want to add tapioca or arrowroot to thicken it, because it would get the thick syrup like when you sweeten with sugar. For rhubarb crisp, rather than using fat in the topping, I add some flour and water/milk. Not quite as crumbly, but not cakey, either. Just enough to hold it together a bit.
