Please share some of your recipes, you must have a bunch since you've been veg so long. :-) I too am animal lover, my partner and I have one dog, 2 cats and a bunch of fish. I recently lost 25 pounds through a combination of increased exercise and reduced calories. My diet is high in carbohydrates like bread, potatoes, rice, and pasta, but also low in fat. I'm doing a vegan diet right now, but do plan to see how I do whenever I start incorporating some dairy and eggwhites eventually. I sometimes go to Ruby Tuesdays and get their salad bar. They have some good choices there. And I also sometimes go to Uno because they will make me a plate of brown rice topped with oven-roasted or stir- fried veggies or steamed broccoli. There is a Lebanese restaurant near me that has some tasty vegetarian choices. And, like you said, Indian. But, you are right, being a vegetarian is enjoyable, except that restaurants just don't have much we can eat. Losing weight is one of the most difficult things I have ever done and maintaining the will power for such an extended period must be very difficult. Keep going and don't look back. I am going to retire from work in a couple of months so I am trying to economize on expensive ingredients as well as calories. Pasta is a standby for us. On Sunday night we had wagon wheel pasta with zucchini, onions, and garlic tossed with skim ricotta cheese and a bit of parmesan on top. Rather than strictly limit ingredients, we limit portions. The French people are an inspiration to me. Their food is very rich but they don't seem to have an obesity epidemic like America does. They must be getting exercise and limiting portions. I cook when I get home from work and my hunger is ferocious! One recipe is for baked red lentils with a lemon flavor and light cheese and bread crumb crust. I will try to remember to post the official, tested recipe rather than give it to you from memory. Good luck with your newest critters. I really don't know what to think about the French. I recently read that the obesity epidemic is starting to spread to all the western European countries as they eat more processed foods. With the stress of home buying/moving we are buying things like veggie pizza and even though the overall Kcal intake is the same we are putting weight on!
