Guest guest Posted September 12, 2007 Report Share Posted September 12, 2007 The one last night went like this: Saute a chopped onion until soft Add 2 cloves minced garlic for 5 minutes Add 1 lg zucchini in bite size pieces, 1 eggplant in bite-size pieces, 2 bell peppers in bite-size pieces, cook for 10 mins or so Add 2 cups diced tomatoes with juices (I used 3 heirlooms), 1/2 cup minced chard (or kale or spinach), approx. 2 cups garbanzo beans, thyme & oregano Cover & simmer for about 15 minutes or so, salt & pepper and top with some fresh parsley I made some Jasmine Rice to put it on.
