My lunch will be leftovers of a lemony broccoli/bok choy stir fry with some red rice. Dinner will probably be sichuan-spiced eggplant with some black rice. I'm feeling better now so I'm hoping tomorrow I'll be back at 100%. I start a women's soccer league this wednesday so I went and bought myself soccer shoes & shin guards <biting nails> 30 years old and I've never played soccer a day in my life! EEEK! But you did inspire me to throw together - in around 15 minutes after coming back from town this morning - a 'stir-fried' (actually steamed in a Tbsp low-sodium soysauce and a little water) concoction. Mine was inelegant but very tasty and I think nutritious: Celery, onion, garlic, ginger and chilies with green pepper, red pepper, arame (one of the sea veggies), edamame (shelled and frozen - from my freezer), chopped mushrooms, quickly marinated tofu I chopped in in 1/4-inch squares while the rest was steaming, bamboo shoots and water chestnuts (I think that was all). Then I tossed it with some leftover brown rice. All that was 'missing' was some bok choy or other suitable green leafy thing, but ya can't have everything, eh? LOL We had strawberries with valencia orange for the pudding course. Tonight is soup (we eat 'lunch' in the evening as a general rule) - carrot and home-roasted red pepper - with, I suspect, the re-heated remains of last evenings cornbread. Plus some salad and fruit. What about the rest of you??? And YES YES YES! I have been checking out your blog and went back today to find all the luscious things you've been devouring. When can I come for dinner?????? (I'll catch the next passing wave or should I come across on the back of a dolphin?) Everyone take a look - the the blog, that is, not yours truly on a dolphin. So chock full of yumminess! :-) And congrats on starting soccer. That's awesome! So I imagine you start practice tomorrow. When is your first game? As a disclaimer, not everything on there is slimming! :-O But there is a lot that is.
