Guest guest Posted October 17, 2007 Report Share Posted October 17, 2007 More things I've been eating: Today's lunch was a fruited spinach and arugula salad followed by a Spicy Millet dish (adapted from a couple of others, cooked in a crockpot) with Madhur Jaffrey's recipe for Green Beans With Tomatoes (Indian - what a combo, eh? LOL) and spiced steamed chard. We followed it up with Strawberries With Oranges. Photos on my blog http://beanvegan.blogspot.com/ Anyone else? Guest guest Posted October 18, 2007 Report Share Posted October 18, 2007 I'm behind a bit with this (and maybe nobody's interested - but for newbies at veg*nism and at what to eat when veggie, you never know, it might help. So here goes: Yesterday lunch was beanthread noodles with tofu and various veggies out of the crisper - you know, celery, onion, garlic, ginger root, bok choy, green pepper, snow peas, mushrooms plus some sliced bamboo shoots and water chestnuts and - oh yes, bean sprouts. Nearly forgot the beansprouts! I kind of sauteed them in a little (very little) liquid, and then added the tofu which I'd cut into cubes and marinated in the usual bunch of stuff (reduced sodium soysauce, ginger, garlic, chilies). The beanthread noodles (maybe you call them glass noodles?) just had to have boiling water thrown on them while the other things were in the pan, then drained and tossed in the mix. You get the idea. (And there's a photo on my blog http:beanvegan.blogspot.com) Supper was soup etc. And breakfast? As usual, steel-cut oats (soaked overnight but not cooked) with some dried cranberries, a smoothie of blueberries, banana, soymilk and spirulina, and a slice of whatever 'breakfast' bread is being eaten that day - it was banana bread Love, Pat Quote Link to comment Share on other sites More sharing options...

And yes, I believe we commonly call them glass noodles down here. :-) Well, there are photos of it - and of yesterday's lunch too - on my blog at http://beanvegan.blogspot.com Yesterday it was quite a little smorgesbord (do I ever spell that correctly?) - as you see - but today it was lunch out for the rarest of times. We went to Zen Gardens which is entirely vegetarian and almost completely vegan (non-vegan items carefully marked so that you don't make an error and the wait staff are careful to _assume_ vegan unless you say otherwise! What a change!!!). I had Enoki Mushroom Balls - which were not fat-free or particularly low fat, since they come briefly deep fried. They're wrapped in seaweed and in a sauce that is very good - and all sitting on a bed of steamed baby bokchoy, so that one gets so very many good things (except for the oil - but hey, once in a long while, eh? LOL) all on one plate. Supper was soup - but I'll leave that very successful experiment for tomorrow's post What are the rest of you eating?????? Come on - I need ideas, guys!!!
