Recipe:Seasonal Sweet Potato - Butternut Squash Soup

Hi Everyone, This soup tastes divine. The difficult part was peeling

the butternut squash. At Costco they have bags of peeled and squared

butternut squash. It would make this recipe alot easier. Those things

are hard to peel. The Vegetable Bisque can be purchased from Trader

Joes, it makes this soup full bodied and really yummy. No extra salt

is needed because the Bisque is pre-salted.

 

Serves alot!!

 

Here it is:

 

1-2 T Olive Oil

2 Stalks of Celery chopped

1 Onion chopped

1 t of each Rosemary, Thyme and Sage

1/2 t salt

3 bay leaves

2 Large Sweet Potatoes peeled and diced in to small squares

3 cups Butternut squash peeled and diced into small squares

1 32oz aseptic soup pack from Trader Joes called Vegetable Bisque

 

In large pot, saute celery, onion, herbs in EVOO with salt sprinkled

on top to bring out the flavors of the onion & celery. Put potatoes

and squash in with sauted onion mix, fill with water until just

covering to top of the potatoes/squash in the pot. Bring to boil,

cover and turn down to low for 20 minutes until tender. Add vegetable

Bisque and mash the to potatoes with a masher depending on how you

like the consistency. It's nice to have a few chunks in there. Bring

it back to a boil, turn off and serve. It tastes even better the next

day!!!

My trick to peel butternut or any other squash is to poke a few holes in the

skin with a knife, pop it in the oven at 350, and bake until soft. Then all

you have to do is let it cool enough to handle, cut it in half with a big

knife, scoop out the guts, and then use a spoon to scoop the flesh from the

shell. Then you can add it to your stock and let it simmer for a little

bit.

Just a question--I try to avoid buying aseptic soup packs because we

cannot recycle them. May I assume that any vegetable stock will do or

is there a special flavor that I should add to my vegetable stock?

What did you use? I have good luck with a standard

carrot/potato peeler. Certainly a lot easier to peel

raw than, say, an acorn or buttercup with all those

ridges. :) For those I use Pat's suggestion of

baking and scooping.

Hi Kathleen - Sure any veggie stock would work for this recipe. I

thought those asceptic food packs could be recycled. I keep putting in

the recycle bin and doesn't it have a recycle symbol on the bottom?

I think things might not be the same everywhere in the world :( Where we

are we are asked not to put such containers in with the recyclable paper.

A good reason not to use asceptic packs! (Sometimes, I know, it's unavoidable.

Organic soymilk, for eg. comes in those kinds of packs . . . and if you use it

but very rarely then . . . . (shrug).) Also, just for the record, not everyone

has

a Trader Joe's! Life's a bummer, eh? LOL

You would usually recycle them with pop bottles, not paper. If anywhere in

your area accepts them.

Okay, thanks - they don't tell us that, but I'll ask and then if it's okay

to

recycle them I can use them with a clear conscience!!!!
