You do indeed, Erin. And I have made a couple of your recipes more than once - I

like

especially your bean muffins, which (btw, everyone, listen up) have no flour at

all in them.

Of course, with my usual peculiar tastes, I sweeten mine with stevia, add a

spoonful of

carob powder and various spices to turn them from savoury to sweet. (I can feel

Erin

shuddering from here - sorry, Erin!) Good for munching on train journeys!

Love and hugs, Pat

Ooooh! If you have a good recipe already, send it this way. Or are you like me

and simply throw in lots of beans? lol

Thanks,

Gina

I do this kind of thing too and have made brownies

predominantly from beans. As you say, they make for

moist results without all the fat. And, if you don't

tell anyone, they won't know. :)

I usually tell people what is in my baking, particularly if it is

something unexpected. After all, someone with a bean allergy would

normally consider brownies a " safe " food to eat and wouldn't ask you

if they had beans in them.

I don't always tell my family, because I know their safe/unsafe foods.

And if it is really unusual but I don't want to give it away, I might

also just say " you don't have any allergies, do you? " as I pass them

out.

Gina,

I'm like you in that respect and just let the

creative juices flow. But with some extra effort

to write everything down, I did manage to release

a low-fat vegan ebook (which Pat mentioned in

another post).

Pat,

Thank you. I'm so glad you are still making things

from it, rather than it just being due to its newness.

:) No cringing here; I encourage the kind of

experimentation you do with the bean muffins (I have

a couple sweet suggestions in that one's variations).

Pam,

I ask people about nut allergies, say when doing

a cheeze, but didn't even think to ask about beans,

unless it's soy. Guess you never know. I'm with

you on revealing potential allergens.

Yes, Yes! Please send in some of your recipes for baking with beans. It

sounds both fascinating and yummy!
