One dish that I like is a hot vegetable salad. Cauliflower, bell pepper,

carrots, and cucumber are sliced thin and softened in a small amount of water or

broth. Once the veg is crisp tender, a pour over a little vinaigrette, toss and

serve.

Chickpea and tomato curry (cutting down the amount of oil they suggest because

it seems waaaaaay too much to me and I don't think my version suffers any!)

 

We serve it either straight (it has potato in it as well), with rice or on a jkt

spud
