Roasted Veggies

What are some ways that roasted vegetables (bell peppers, zuchini,

broccoli, eggplant) served? I am look for ideas to serve the veggies on

a grain of some type, such as a flour tortilla or wrap or whole grain

roll. Sort of a sandwich type food, handheld.

 

Any suggestions? What's worked?

What are rice wrappers? Is that rolled in rice like sushi or something

different?

 

I use lettuce leaves and, depending on what I'm putting inside,

sometimes a lightly steamed cabbage leaf is good (though not as

" holdable " burrito-style as Susan was asking for.)

It's a thin " paper " circle made of rice. Looks like a brittle, shiny,

paper-thin taco shell. You get them a little bit wet to soften them

into a foldable/rollable/wrappable dough, and wrap up your veggies

with that. Usually used for thai spring rolls, with raw lettuce and

veggies inside, but could be used for cooked veggies too.
