RE: [SPAM] - Roasted Veggies - Bayesian Filter detected spam

We serve a roasted veggie sandwich that consists of eggplant, peppers

(green, yellow & red) and onions. We also combine cream cheese, feta cheese

and garlic to spread on the roll before serving. It's very popular even

with the non vegetarians.

What are some ways that roasted vegetables (bell peppers, zuchini,

broccoli, eggplant) served? I am look for ideas to serve the veggies on

a grain of some type, such as a flour tortilla or wrap or whole grain

roll. Sort of a sandwich type food, handheld.

 

Any suggestions? What's worked?

I went to a lovely café once that served these vegan wraps that were so

delicious they melted in my mouth. I don¹t think they were low-fat because

obviously all the veggies on it (onions, peppers, eggplant, zucchini, etc.)

were sautéed in oil and seasoning, and I don¹t have their recipe. But I

make something similar (and lower fat) at home by spreading the sliced

veggies on a pan, brushing with water, rosemary and whatever else I feel

like and putting them under the broiler/griller for a few minutes on each

side. I layer them in a tortilla wrap and squirt a small amount of low-fat

vegan dijonnaise over it, roll theme up and yum!

My favorite way to eat tortillas and wraps is not to roll them up,

but to fold them in half twice. You end up with a cone shaped wrap

that can be held in your hand. Much less mess than rolling up.
