I've always found that planning ahead works best and anytime I don't

plan ahead I end up eating junk. I've been a single parent for 11

years and prior to that my ex was absent half the year or more

anyway. I've never had any family who could help me with kids and

their father vanished 11 years ago. I have always worked while the

kids were in school so I could be home for them before and after. Now

that they are older they pitch in and cook but I need to do the

planning. My work is more chaotic now that the kids are older as I am

on call and never know when I am home or not from day to day. I can

get a call at 4:00am to be in a kitchen by 6:00am or I might get

called away in the middle of a day and have to leave notes for the

kids regarding dinner. The only two days that are regular I am in

college from 9:00am until 6:00pm. Because of my schedule everything

needs to be straight-forward to make or flexible enough so I can swap

days around.

I usually try to set aside 30 minutes where I can look at what I have

in the house... decide on meals from there and make a shopping list

of things I need to complete the meals then I print out the weekly

menu and stick it on the fridge. As I have decided now to take

control of my weight I have to make sure that the meals not only are

slimming but will also suit 2 active teens... 1 who goes to the gym 4

times a week and plays baseball every weekend (summer and winter) and

has practice 1 day a week. I didn't get time last week to make a

plan up but am taking time to do so today and would be happy to share

if anyone would find that useful.

I would like to see what you have planned.

My list is from the files...

3 grain Pilaf, pizza style veggies, snobby joes, my own version of enchiladas.

I made some of the mango-avocado dip, and it is sooo very yummy! I have hummus

for an after-work snack, and lots of fruits for breakfast. I have soup everyday

for lunch, so that makes it easy :)

Monday - sweet potato & chard soup

Tuesday - tofu stir-fry

Wednesday - vegetable lasagne

Thursday - spinach boreks

Friday - mushroom risotto

Saturday - vegetable chili

Sunday - bean burgers

Hi hon-

 

Sounds like a great menu. Now, the only thing I wondered about was spinach

boreks but I _think_ that means spinach and herbs and spices with some nuts

(maybe nuts?) in pastry - perhaps phyllo pastry? Tell me I'm not dreaming!!!!!

My meal plan for this week:

Monday-Mushroom alfredo

Tuesday-garden burger

Wednesday-unknown-I am eating at in-laws-hoping for salad

Thursday-13 bean soup w/tofu

Friday-veggie pizza w/low fat mozzarella

Saturday-tofu/veggie curry w/rice

Sunday-dahl and flat bread

I don't have a plan this week. I'm all planned out after following a

rotation diet for a couple of months, and just taking joy in eating

foods on whatever day of the week that we like, right now.

 

We have recently had (all breads/buns/etc. homemade gf):

 

Pancakes, fruit, scrambled egg whites

Beans, rice, & salad with naan bread

Pizza

Spaghetti

 

Brown Jasmine rice and veggie ham for breakfast (one of our favourites!)

Smoothies and toast for breakfast

 

Tonight . . . I'm not sure yet. Maybe some spaghetti using sweet

potato noodles. I don't like to have beans the night my son goes to

Cubs or he gasses out the room . . .
