Anyone eating anything good lately?

Hi group!

 

Just checking in and seeing if anyone has anything tasty on their menus. 

 

Last night I made some summer veggie tacos.  I sauted yellow summer squash,

zucchini, broccoli, bell pepper, & onion, cooked an ear of corn, chopped up some

lettuce, cilantro, heirloom tomatoes &   a lemon cucumber.  Also had a small

amount of Amy's refried beans with green chiles in it and some Spanish Rice. 

Yum!!!

 

And can I just say how happy I am that tomato season is upon us?!  Picked up a

variety of heirlooms last week; nothing better than a simple tomato sandwich on

a hot day.

 

Hope everyone is good; I'm still dealing with personal issues but have been

reading the emails.

 

And welcome to any new members who have joined us recently!!

Hi Cindi,

 

Your tacos sound awesome! Today I was a bit lazy, so I made a quick stir-fired

(well, stir-steamed, but ya know what I mean) concoction.

 

I had some darling little baby bok choy, to which I added onion, celery, garlic,

ginger root, chilies and mushrooms. I got them all to a just-manageable

crispness and added some marinated (Braggs, sambal oelek (an Indonesian chli

paste/sauce) pre-frozen and pre-squeezed tofu and half a dozen 'baby' corn which

I barely heated through. I made a quick sauce from some of the marinade

ingredients, a Tbsp (next time I'd use two) peanut butter whisked together with

a tsp cornstarch and water and a little low-sodium soysauce. With green onions,

thinly sliced, plus a handful of chopped cilantro (green coriander leaves) as

garnish, we had a good meal served with brown rice.

 

Tasty, but not exactly as exciting as your lovely tacos!!!!

Mmm sounds good. We are preparing for a long distance move and my kitchen is

shut down and packed up so I am living on vegetarian frozen meals, raw veggies

with hummus, and tortilla chips with pico de gallo and avacado (ok so the chips

are not very slimming bu it is a good combo!). I can't wait to get in our new

house and go grocery shopping for real food (oh and for the moving truck to

arrive).

Yes, I have eaten something very, very good --  pickled onions.  Here is a quick

and easy recipe from The Savory Way by Deborah Madison.  They are tasty in

sandwiches, as a salad topping, a topping for beans or as a condiment.

 

2 lbs purple onions

1 cup white wine vinegar

1 cup cold water

1 teaspoon sugar

2 bayleaves

fresh thyme sprigs (or a small amount of dried thyme)

10 slightly bruised peppercorns

salt to taste

 

Thinly slice the onions, separate into rings and place in a colander.  Pour

about 2 quarts of boiling water over the onions. 

 

Mix remaining ingredients in a bowl and add onions.  I let them sit overnight,

but I think they would be ready much sooner.  Will keep for about three weeks in

the refrigerator.

That totally songs delicious! I made a basic stir fry with red onions, red and

green peppers, sliced portobello, skinny slices of savoy cabbage, and 2 garlic

cloves. It all sat in a zip top bag over night. It smelled so good in the bag,

but didnt have much " flavor " to it :( the savoy cabbage made everything soggy :(

I made quinoa, too. That was yummy.

Okay, I ended up making stir fry today too, with brown rice and

marinated tofu.

 

Yesterday (Canada Day here) I went to a BBQ on my brother's acreage,

and took along tinfoil packets of thin-cut veggies (thank you food

processor) and veg chicken, green salad, and fruit salad.

Tonight I threw together some pinto beans, dried ancho chilies, corn, onions

and a bunch of spices. We had that over rice for dinner, even the kids ate

it!

They were awesome!  And so were some leftovers tonight.  :-)

 

Your stir fry sounds yummy!  I love being able to just grab whatever's around

make a stir fry or tacos or whatnot.  It's nice for those not planned ahead

meals and lazy nights.

Ah yes,the convenience foods of moving/having your kitchen apart!  How long til

the big move?  I'll be moving at the end of August but only across town so

that's not too bad.

I'll have to give those a try.  I'm a definite onion lover but have yet to have

any pickled.  I have a few of Deborah Madison's books so I'm sure it's a good

recipe!

Did  you use any spices during the stir fry?  I hate when I spend a lot of time

prepping and cooking and then the dish is bland or just not right.  Such a waste

of time and food!

I like quinoa too.

Did you marinate the tofu?  And if so, in what?  :-)

 

You took some good choices to the BBQ.  I will be attending one Friday and will

probably bring a cold veggie salad of some sort and something to throw on the

grill.

A couple of days back Dr Dragon (ie other half!) made sweet and sour

cabbage :-) - once I work out the kcals and fat I will post it to the

group if people are interested (it was very tasty just on its own, Dr

Dragon mentioned that you could do it as one dish of a Chinese banquet

menu and it would be a nice change for veggies from pak choi or mushrooms)

I feel the same way about it. I had prepared the veggies while the night

befores meal was cooking, but would have rather been playing with my daughter.

I added soy sauce, but not until the end. I am a novice with spices... Spike

goes good on about everything and I have a Paul Prudhommes Italian blend I use,

that is about it :(

That totally songs delicious! I made a basic stir fry with red onions, red and

green peppers, sliced portobello, skinny slices of savoy cabbage, and 2 garlic

cloves. It all sat in a zip top bag over night. It smelled so good in the bag,

but didnt have much " flavor " to it :( the savoy cabbage made everything soggy :(

 

I made quinoa, too. That was yummy.

It's amazing how very quick a good hot meal can be if you have the right things

in the fridge and cupboard! I have started keeping in those WW tortilla wrap

things for days when there just isn't time for something more

formal/conventional, since you can stuff almost anything in them and with herbs

and spices make it taste sensational as well as look as if it's something rather

than just leftovers!

I love experimenting with herbs & spices; I love cumin, cilantro, basil, thyme

(one of my faves), chipotle chili powder and many more!  There is a Chinese

5-spice blend that goes really well in stir fries and whatnot you might want to

look for.

 

I am not fond of dill, at all.  I think that's the only herb/spice that I really

can't stand (that I've discovered so far!)
