Zak's 4th b-day party is Sat and I definately want to tempt and tease me guests with some great vegan food. Now I have a few ideas, mostly from some of the awesome recipes fraggle has sent me, but I wanted to see if there were any tried and true recipes you could suggest. Now, we are talking about a bunch of people who are all animal eaters and think that I am going to drop dead any second now due to be a vegan. I can see them watch every breath I take thinking it will be my last! LoL And actually I am rather enjoying it and think I just may have to feign a faint er two at the party. Nooooo, I'm not really that evil! Oh, ok I am. Anyways, if any of you have any great ideas fer a brunch/lunch type kiddie party. Nothing fancy, just simple easy and delicious I would love it. This is me chance to show them just how delicious and healthy being a vegan can really be. Plus I have a garden full of veggies just calling out to be made into something! Guest guest Posted September 4, 2002 Report Share Posted September 4, 2002 lotsa kids right?? go fer sweets... how many adults?? have you thought of a vegan lasgna fer em?? stay away from the trail mixes and that sort of thing, cuz, that is wot they EXPECT!! go with healthy fruits and veggies, and things which burst with flavor, if you want to make a mark on the carnivores Chocolate Cheesecake Ingredients: 1 box Mori-Nu Silken firm tofu 1 Tofutti brand cream cheese 2 pkgs Mori-Nu Mates chocolate pudding mix 1/4 cup vanilla soymilk (I use Silk brand) 1 Tbsp liquid sweetener 1 chocolate cookie pie crust Directions: Blend the above ingredients (except the pie crust) until well mixed. Pour into pie crust and refridgerate until firm. Serves: 8 Preparation time: 10 minutes Delicious Raspberry Tofu Cheesecake Ingredients: 1 container of vegan cream cheese (I prefer Tofutti) 1 Tbsp. lemon juice about 12 oz. firm tofu (2/3 of a 15 oz. package) 1 cup granulated white sugar 1 tsp. vanilla extract 1 container vegan raspberry yogurt (I prefer Wholesoy) 1/4 tsp. cinnamon 1/8 c. vanilla soymilk vegan graham cracker crust raspberry pie filling to top fresh raspberries to garnish Directions: Preheat oven to 400 degrees. Crumble tofu by hand and then put into a blender along with all pie ingredients. Blend until completely smooth- this will be relatively thick. Pour into pie crust and bake for 45 minutes to 1 hour or until a golden 'skin' has formed on the top. Remove from oven and refrigerate several hours until cold. Top with a thin layer raspberry filling and sprinkle fresh raspberries on top of that. Delicious! Serves: 6-8 Preparation time: 15-20 min. 5 Star Chocolate Peanut Butter Pie Ingredients: 1 pkg. firm or soft silken tofu(I use firm to make a more decadent texture, similar to cheesecake) 1 pkg of vegan chocolate chips (Tropical Source makes really appropriate chocolate-peanutbutter chips) soy milk (at least a cup will be used) powered beet sugar (1 box) (also could use corn syrup er stevia) peanut butter (preferably a natural blend) graham cracker crust (you can make an easy one with vegan marg. and crushed graham crackers) Directions: Put the chocolate chips in a microwave safe bowl and heat them for a few minutes. It is very crucial that you watch carefully and stir to avoid burning. You don't want the chips to be completely soupy liquid, you are going for a more molten melted effect. Put the chocolate in your blender where, as waiting for the chocolate, is the slightly broken up silken tofu (which you already pressed to get rid of excess juice). The next process must be done quick as to avoid the hardening that the chips like to do. Have your soy milk container open and near the blender to pour in when the mixture is too thick to stir, but don't add too much. You want a thick pudding when the blending of the chocolate and tofu, with a little soy milk, is finished. It should be basically pourable, so go ahead and pour it into your crust. Place in the fridge for 30 mins. While the chocolate pie is setting up, melt about a cup of peanut butter in the microwave. Stir in some of the powered sugar until thick, then add some soy milk, then add some powered sugar and so on. Continue this process until you have a sweet, thick peanut butter paste that is not too sticky. Carefully spread the peanut butter mixture on top of the pie. There should be enough that it becomes the top layer of the pie. Let it set for about 3 hours. It will be like a cheesecake and wonderfully rich. Serves: 8 Preparation time: 30 min. Key Lime Cheese Cake Ingredients: 1 12 oz tub Tofutti Better than Sour Cream (Frozen and thawed) 1 10.5 oz package Extra-Firm Silken Tofu (Mori-Nu) 1 cup fresh squeezed key lime juice 1 teaspoon lime zest 1 teaspoon vanilla (or more to taste) pinch salt 3/4 to 1 cup vegan sugar (sucanat) 1/4 cup firmly packed egg replacer (Ener-G brand) 1 tablespoon cornstarch 1/4 cup raw, unsalted cashews 1 teaspoon miso (mellow yellow miso use less if using a darker miso) 1 vegan pie crust (see below) Directions: This is a vegan adaptation of my sour cream lemon pie. Serve with mock whipped topping if desired. Blend together until totally smooth, stopping to scrape down sides if necessary. Taste and adjust for sugar. Pour into crust. Smooth top. If using the crust below, attractively fold in phyllo tightly to make a tightly rolled edge around the pie. Spray crust lightly with oil or non-stick spray. Sprinkle with sugar or flax if desired. Bake at 350 for approximately 30-35 minutes. Ovens are different. Check often. When edges are nice and lightly browned, and filling is almost set (top will crackle like real cheesecake), turn off oven and allow pie to cool in oven for another 30 minutes or so—check to make sure it is not getting too brown. Then cool and refrigerate. Crust: A homemade graham or other crumb crust or other vegan crust would work equally well here, but this is a pretty and unusual crust. 9 sheets vegan whole-wheat phyllo dough Approx. 1 tablespoon ground flax seed (crumbs would also work well) Approx. 1 teaspoon vegan sugar Oil spray or non-stick (I use a non-aerosol sprayer) Place sheet across 9 inch pie plate. Spray lightly with oil, sprinkle lightly with flax and sugar, place second sheet perpendicular to the first and spray lightly with oil, sprinkle with flax and sugar. Repeat, arranging the sheets like overlapping spokes, ending with a spray of oil, and a healthy sprinkle of flax and sugar. There have been several times when I've taken cakes along to parties, and people are really happy to eat them until they see me eating them - as soon as they realise that they're vegan, they act as though the cakes may carry some contagious disease!
