This is a very easy and delicious recipe. You can

change around the types of veggies you use in it

according to the season. i have used a tomato sauce

in it before for variety and it was delicious.

i served this last week with a nice round of rye bread

and a green salad.

i found this recipe in 'Vegetarian and Vegetable

Cooking' by Christine Ingram. :)

 

Vegetables under a Light Creamy Crust

 

2 leeks, thinly sliced

3 zucchini, thickly sliced

1 1/2 cups sliced mushrooms

2 garlic cloves, minced

2 Tbs. olive oil

2 Tbs. butter

1 Tbs. all-purpose flour

1 1/4 cups vegetable stock

1 tsp. dried thyme

Salt and freshly ground black pepper

2 Tbs. fromage blanc [aka ricotta]

 

Topping:

16 oz. fromage blanc

2 Tbs, butter, melted

3 eggs, beaten

Salt and freshly ground black pepper

Freshly grated nutmeg

Freshly grated cheese and dried bread crumbs, to sprinkle

 

Preheat oven to 375û F. In a saucepan, gently fry the

leeks, zucchini, mushrooms and garlic in the oil and

butter for about 7 minutes, stirring occasionally, until the

vegetables are just soft.

Stir in the flour, then gradually mix in the stock. Bring to a

boil, stirring until thickened. Add the thyme and seasonings.

Take the pan off the heat and stir in the fromage blanc.

Pour the vegetable mixture into a shallow oven-proof dish.

Beat the topping ingredients together, seasoning them well

and adding the nutmeg to taste. Spoon on top of the vegetables

and sprinkle with cheese and bread crumbs.

Bake for about 30 minutes, until a light golden, firm crust forms.

Serve hot with pasta of crusty bread.

Yield: 4 to 5 servings
