Zucchini with Pasta and Chipotles in Adobo Sauce ¾ lb spaghetti 4 cups grated zucchini 2 teaspoons olive oil 2 cloves garlic, minced 1 7oz can Chipotles in Adobo sauce ¾ teaspoon salt Ground black pepper to taste 2 tablespoons grated parmesan or asiago Cook pasta as directed, but omit salt or oil. Remove one chipotle from the can of chipotles, and mince. (If you like it hot, leave the seeds in. If you like it mild, scrape the seeds out before mincing. If you like it really hot, add two chipotle peppers). Heat oil in large skillet. Add garlic, minced chipotle, and one tablespoon of adobo sauce from can. Saute for 1 minute. Add zucchini and sauté for 4 minutes, stirring constantly. Add pasta and stir. Salt and pepper to taste. Add Asiago or parmesan before serving.
