Coffee Walnut Pound Cake 5 tbsp instant coffee 1/2 cup hot milk 1 1/3 cup butter 1 1/2 cup sugar 4 eggs 2 2/3 cups flour 1 tbsp baking powder 1/2 tsp salt 1 cup chopped walnuts Preheat oven to 350F. Dissolve coffee in milk; let cool. In a large bowl, cream butter with sugar; add eggs, one at a time and beat well after each addition. Sift together flour, baking powder and salt. Add alternately with milk-coffee mixture to creamed mixture. Fold in nuts. Bake in a greased and floured 12 cup bundt pan for 50 - 60 minutes (or until cake tests done). Cool in pan for 10 minutes; turn out onto plate or wire rack to complete cooling. Top with a crown of Vanilla Glaze. I may have to try that but change out the white flour with Oat Flour (can be ground from rolled oats in a blender), and substituting brown sugar (a lesser amount to taste) for the refined white...other than that, I LOVE coffee & walnuts!!!!!!
