At the Thanksgiving dinner yesterday there was a young lady that has serious environmental allergies, and one of her main allergies was wheat gluten. Our hostess had suggested i bring a few organic vegetarian dishes in hopes she could eat them, but she forgot to mention the wheat-free aspect. Guest guest Posted November 26, 2004 Report Share Posted November 26, 2004 hi pt rice and corn are for sure gluten free. i wouldn't use soy because that's a common allergin. you could make a cornbread stuffing using gluten free bread (can be found in the freezer section of health food stores) and homemade cornbread (made with just cornmeal, no flour...it would be easy to find a recipe online). gluten is hidden everywhere....many store bought broths contain gluten, it's in some baking powders...so keep an eye out. here's how i make cornbread stuffing/dressing (sorry, i don't use measurements, but you can't mess this up)... crumble a batch of homemade gluten free cornbread and (maybe half a loaf?...i wouldn't use too much, it doesnt' taste all that good) gluten free bread in a large bowl. saute chopped onion (1 medium), garlic (2 cloves), and celery (3 stalks) in butter (or olive oil) until tender and add to the breads. season with salt and pepper, poultry seasoning and/or sage to taste. add 2 beaten eggs and enough broth to moisten (2-3 cups broth...don't get it too wet). pour into a greased pan and bake at 350 degrees for about 45 minutes. hope this is helpful, susie --- ~ PT ~ <patchouli_troll wrote: > > Does anyone here have a good recipe for vegetarian > wheat-free stuffing? If the bread one uses to make the stuffing tastes bad it makes me wonder if the stuffing wouldn't end up tasting bad. [?] *lol* Only one way to find out. Oh and you mentioned also about gluten being in so many packages products, even broths. i will sure have to check the labels very carefully then. What other ways is it listed on the labels that i should adjust my radar for?
