I have been studying the subject and only recently came to understand that there are a wide variety of choices in vegetarianism. It's the cheese that trips me up -- no substitutes come anywhere near the real thing in taste, plus they are expensive and hard to find in my neighborhood. I don't really drink milk or eat eggs. You have hit on good points here, concerning availability of various foodstuffs and another being the textures and flavors if not what we are used to. I find nutritional yeast to satisfy my cheese cravings though it is different. Fortunately, I have developed a variety of alternatives though i sometimes sample cheese when traveling. I made it a point to introduce a couple of new foods for everything i decide not to eat. The underlying principles of " macrobiotics " meaning large or whole life, is to find what rocks your boat. It begins with a challenge of scrubbing down with whole grains and miso but was a beautiful process for me. i was fat at 30 and scared me how i felt when trying to walk one day. My son's leading me towards veggie style was a godsent... Sometimes we eat for reasons other than nutrition and why the health food industry has introduced various treats. At a vegan dessert party in San Francisco, i had the most wonderful vegan desserts including soy ice cream and chocolate truffle cake that would blow u away. It would be nice if we had a resident dessert critic of products on the market, though i offset desires with whole grain bread [i like Great Harvest chain]. At the same time, i still satisfy like my lusts though not at the expense of health. I hope that companies like Trader Joes will introduce more dairlyless goodies especially since i LOVE germache [truffle cake with thick chocolate outside and layers.... When traveling in Europe 1997 - 2000, i had to try traditional desserts everywhere i went...lol. Because i was backpacking and climbing through the Swiss alps, biking in Holland, and being a vagabond in western Europe, I kept the pounds off in spite of the large package of dark swiss chocolate a friend gave me. When we bicycled to various villages, we sampled the pastries and had a great time. I also love German breads with all the seeds. Has anyone had pumpkin seed bread? My father died at 65 as he was extremely obeise [mom has health problems]. Every time i walk i am thankful because it was something that he couldnt do without a cane. This last year, i did a couple online family albums [webshots.com] and saw how built my father was when he was a younger man. It left and impression, though it is not my main reason for my change. After reading " Diet for a Small Planet " in '84 I realized that we are going to have more hunger throughout the world if everyone insists on eating beef. I do understand why scientists think they are saving the world through chemicals and genetic motifications but the quality of life has been compromised in other ways than finding ways to produce more. The industrial complex has exploited workers and, as Food First founder Francis LePette said, made " guinnee pigs " of Americans. I know how damned hard it is to find decent food in Texas! It is up to those who care to support the health food industry whenever u can. I had already given up meat (except fish) around 1980, except (sigggghhh, always the exceptions back then) for dining with non-veggie friends off and on. Then I read the book and was convinced - although not necessarily more scrupulous. It’s sad in a way that the ‘food combining’ part of Frances Moore Lappe’s thesis (since corrected) has become what everyone remembers and, therefore, she is made easily dismissible. She deserves better. Learned just about everything I know about health from Gary Null, at garynull.com if you're new to being a vegetarian, I highly suggest you check out Gary's work. He's also on PBS quite often.
