Anybody Have a Good Vegan Chili Recipe? I have one

that I got from 'Follow Your Heart' restaurant here in

Los Angeles, but I'm looking for more good chili

recipe's.

Heres a good vegan chili recipe,

 

chop 3 carrots, one onion, a couple of peppers (color is your pick), 2

stalks celery, and ample garlic. saute these ingredients in a few tbs olive

oil for about 12 minutes. add a tsp chili powder, tsp of cumin and a

chopped and seeded jalapeno. saute a few more minutes. add a can of

coarsely chopped plum tomatoes with juices, a can of black beans, a can of

white beans and a can of kidney beans (feel free to change up the bean

combination), add a cup or two of tomato juice, and a cup and a half of

bulgar wheat, cook it up, boil and then simmer. adjust seasoning and

juices. let me know how it turns out.

 

i just made it on sunday and it will be worth at least a few meals/.

Here's mine I posted a couple of weeks ago:) - Enjoy!! Debra

 

> Vegan Chili

> 1 tsp canola oil

> carries their own brand " Remarkable " - I use those.(do not drain)

> 2 15 oz cans organic kidney beans(do not drain)

> 1 28 oz can crushed tomatoes in tomato puree

> 1 cup frozen corn

> 2 med cans slice black olives (drained)

> 1/2 c. chili powder

> 2 tsp. coarse grind black pepper

> Saute' the onions, jalapenos, and garlic in canola oil until onions

> turn translucent. Add zucchini and cover - simmer until zucchini

Ditto. Please share yours Rick. I had 3 bean chili by Cosi yesterday.

I think it was veggie. (It was busy during my lunch hour....)

interesting addition - is the bulghur added dry or cooked? ALso made

me think that barley might be a nice addition.

bulgar is added dry, cooks up in the tomatos juice of chili

I just put one into the " Vegetarian Recipes " database. Here is the

It is good for a party because non-vegan items can be added as one

of the toppings for guests who might not be vegans. A loaf of french

or srtisan bread, a jug of wine... Most people don't miss the meat.

 

Don't be tempted to leave out the chocolate... it makes the chili.

Chili is pretty good as a topping for any cooked grain(also for

using macrobiotic proportions in the meal). I don't like to actually

mix with grains like rice or barley for cooking because it gets

mushy. But used as a sauce for rice, millet, or other grains chili

works nicely.

I'm not a good cook, I don't like to cook at all. I do however have a good

recipe for vegan chile.

 

Start with pinto beans, dry;

texturized vegetable protein from the frozen section in the supermarket( I think

Morningstar distributes it) in a green 1lb. bag-looks like ground beef.

Fresh veggies to preference; Onions, carrots, celery, etc.

Spices;

Cummin powder,

Cayenne,

Garlic,

Light sea salt

 

Put the dried beans in a crock pot and cover with water to the top. Let cook

6-12 hours. Add spices and seasonings. 2-3 hours later, add TVP.

 

You'll enjoy this with very little labor.

When do you add the veggies? Any ideas on adding both potaotes that

take some time too cook and zucchini that doesn't? - This is where I

fowl up in cooking.
