Tacos are great, I used refried beans for my meat substitute, and all of the meat eaters were happy too. I forget who said they use black beans to do this, Please tell me exactly how you do that if you don't mind. tomorrow I am making spinach lasagna. you don't have to add the spinach cause that ricotta cheese is so yummy ya don't need meat. (I hope he eats cheese) Some nights I am gonna make mac and cheese as the main dish, and other vegetables. My cooking relies heavily on eggs and dairy, like butter on the veggies. I am not a vegetarian for health reasons, so I don't care about the butter, LOL. Does your boyfriend eat fish? I plan to do stirfries, just two separate ones. They can have chicken, I will use tofu. would appreciate any advise on how to cook tofu properly. I don't plan to load up on them, but now and then I plan to eat a meat substitute with the gang, like veggie hamburgers or hotdogs, which are soy. Also, a portabella mushroom marinated in Italian dressing, grilled, and put on a hamburger bun is so good YOU may never eat a hamburger again, LOL. Over the next rest of the days of my life I will be inventing and seeking out recipes and ideas, so stay tuned, LOL. does anyone know just how much protein we are supposed to be getting daily? Made sausage rolls with them for an appetizer recently & he was munching away...paused and looked at me, realizing he was eating sausage rolls at my house & they must be fake... My kids like " mcmuffin " sandwiches, I use the boca sausage patties... Also, get him started on stews & chili's without meat...you can make lovely hearty ones with beans and veggies & there are great broths on the market (look in the health food section they are in paper boxes)...start your savory veggies in a butter/oil combo for a good hearty flavor...tvp/tsp will add texture if you must have it. Almond Pate' It can be used in sandwiches, in wraps, on crackers with wine or anything else that you use pate for. A dollop on top of rice or pilaf is nice in spring with a salad on the side. With a loaf of french bread for the pate and bowls of French onion soup and a jug of wine it makes a hearty winter meal. In response to your questions about how to prepare tofu: When I'm making a stirfry, I will usually start by cubing extra firm tofu and placing it in a bowl with soy sauce, chilli paste, sometimes toasted sesame oil and or plum vinegar. I let it absorb the marinade while I'm chopping the veggies--maybe tossing it a little a few times to make sure every piece is coated. After the vegetables have fried a bit, I just throw the tofu in, marinade and all. You could marinate it with anything you want. You can also wrap the block of tofu in a paper towel and place it on a plate with a skillet or something else heavy on top for 30 minutes to an hour before you marinate it. This will purge some of the water in the tofu and allow it to more readily absorb the tasty flavors of the marinade. I'm sure other people can suggest other ways of preparing it. They're easy to use and remarkably similar to meat. Cheese, nuts, legumes and soy are all good sources of protein. I just wanted to add that vegetarian food doesn't necessarily need to be " high carb " . Certainly, you'll consume more carbs as a vegetarian than someone who eats nothing but meat, but there are plenty of low-carb/good-carb options. More whole grains, less processed stuff. I've been a vegetarian for 14 years and have been on the South Beach diet for 11 months (lost 30 lbs!).
