IT'S ME AGAIN. I MENTIONED I AM IN THE NAVY. I HAVE BEEN EATING

FROZEN VEGGIE BURGERS AND STUFF FROM WAL MART. I AM LIVING IN THE

BARRACKS AND DO NOT HAVE A STOVE OR OVEN. ALL I HAVE IS A MICROWAVE.

CAN SOMEONE SEND ME A DELICIOUS RECIPE THAT DOESN'T INVOLVE AN OVEN?

clues as to what you like, and I'm sure we can come up with some

ideas for you!!

Danny -

 

I thought of some things you could do - these will all work if you

are lacto-ovo (not sure what you prefer):

 

Baked Potatoes: pierce raw potato numeous times, wrap in wet

papertowelling and microwave for 6 - 10 minutes (until done) top with

canned vegetarian chili (Hormel makes one now), or go with a Green

Giant veggies & sauce packet (like broccoli & cheese). Or you could

top with all the traditional stuff including a soy-type bacon bits:)

 

You can microwave quesadillas (carefully - you don't want to overcok

your tortillas), and you can also make wonderful wraps/burritos by

microwaving some ingredients:) Zap up some black beans and corn, and

add bell peppers, onions, lettuce, tomato, avacado, cheese, sour

cream - whatever you prefer and wrap in a warmed tortilla:)

 

I think you could probably also microwave " scrambled tofu " but you'll

have to do it in pieces then nuke once more at the end. I like to

use onions and peppers (which can be bought already chopped as frozen

if you prefer) steam cook with a small amount of water until

transluscent but not mushy - drain, and add tumeric, salt & pepper to

taste. Crumble in the drained firm tofu, and mix well - I also like

to add (drained & rinsed) vegetarian chili-hot beans to this mix, and

I serve it in warmed corn tortillas with a habanero tabasco (what can

I say - I'm a Texan).

 

Soup & Salad & bread night - a no-brainer;)

 

Pasta & Veggies: Michelina's brand makes some good meat-free pastas,

like mac & cheese, spagetti marinara, fettuccini Alfredo, etc - just

read the labels - microwave along with some frozen veggies & you've

got a meal:)

 

If you buy some microwave cookware, some bread/cake mixes will have

microwaveable instructions. Beans & cornbread with fresh sliced

onion and tomatoes on the side make a lovely meal!!

 

Have you found a veggie-dog you like? I like Morningstar Farms, and

I'm told that Boca-brats are great too:) Do a hotdog night, (and

grab some sauerkraut if you like it) potato salad or chips and

vegetarian baked beans (Bush brand is great and does also come in

small cans)

 

Then there's all the frozen dinners/breakfasts/items available from

Amy's, Morningstar Farms, Linda McCartney, Gardenburger, Boca, etc:)

Add a fresh salad or side veggie, your favorite bread, and you've got

a nice meal.

baked apples with cinnamon are great int he microwave. I add some butter too.

Just throw them in and nuke.

me too - 90% of the time mine holds boxed goods. (I live in a studio

apt.) 5% is makes popcorn.....
