Guest guest
Hi Everyone, Before I give ya my recipe I wanted to share this, as we were just talking about smoking, and I am trying to quit. My 7 year old daughter said to me this morning, " mommy, I wish cigarettes were made of animals so you wouldn't smoke them anymore.' I THEN SET MY QUIT DATE anyway, my sister is a culinary artist. She could make a tasty meal out of a twig and some dirt I swear! LOL. Anyway, she showed me this one last night, simply out of this world. Plus, she is a diabetic, and says this dish supplies big energy for her work day. Veggie Spring Rolls She used: 1 bag of broccoli salad mix which was cabbage, red cabbage, and broccoli. If you can't get the bag, just get the veggies individually. put in food processor or chop up in small bits. Fry in a small amount of sesame oil. It MUST be sesame oil. Throw in a teaspoon of that jarred chopped garlic. salt and pepper. Sprinkle in some fried rice seasoning to taste. It comes in a little package in most supermarkets. Add a couple of sprinkles of Thai fish sauce. Thai fish sauce can be obtained in most Chinese markets. You don't want to use too much, just a couple of sprinkles, just taste it while cooking to season to your liking. You want the mixture to stay pretty dry in the pan, or you will have a mess to roll. Fry until veggies are tender, and roll in spring roll wraps. Fry in vegetable oil or corn oil. They were so good for Sunday football! Even the meat eating macho testosterone filled football watching men ate them up like crazy, LOL I don't think they knew of the lack of meat. Blessings, Maria/Chanda. Guest guest
I would imagine. I would imagine they could even be steamed. I will ask her when I speak to her tomorrow and I will let you know. Blessings, Chanda/Maria - Amy P. I'm o.k. with the sauteeing part, but can these be baked instead of fried at the end?
Guest guest
eeek I don't know. One thing, it's very salty. You could switch and do soy sauce, would be different flavor but still yummy. - psybermus Monday, December 06, 2004 1:49 PM Re: recipe veggie spring rolls >Add a couple of sprinkles of Thai fish sauce. Thai fish sauce can be obtained in most Chinese markets. Well, this looks really good, but, well I have not seen a Thai fish sauce without, er, fish in it. Can you tell me what brand the fake 'fish' sauce comes in so I can ask for it? I was asking someone about this around a year or more ago, but the best we could come up with was making your own with tamari, lime juice, a pinch of kelp powder and a lot of imagination LOL Many thanks! Guest guest
didn't get to talk to sis yet, but found this: For spring rolls, the texture has to have a contrast, and if you bake them, you don't get the crunchy skin -- but you can pan sear them to reduce the fat and still have the texture of crispy outside and tender and moist inside - Amy P. For newby veggies - it has anchovies in it - watch for it in the ingredient list. If you are making things that call for it, you can get a vegetarian version, I don't remember the brand, but it is very good - I use it lots! Can >you tell me what brand the fake 'fish' sauce comes in >so I can ask for it? We have a vegetarian asian market here in Oz where they sell vegetarian fish sauce. They have a website here - http://members.iinet.net.au/~yongcorp - if you email them and ask what the brand is you might be able to find it in your country. - Maria/Chanda For spring rolls, the texture has to have a contrast, and if you bake them, you don't get the crunchy skin -- but you can pan sear them to reduce the fat and still have the texture of crispy outside and tender and moist inside - Amy P. Try baking them on some baking paper, it won't be the same as being fried but it will crisp up and won't have all the fat content. Guest guest
One very good veggie brand is JRP'S. Made from a secret family recipe, printed on the side of the bottle. One dollar for 10 oz bottle at the dollar store. You can find lots of veggie stuff everywhere if you just read the labels. " Be kind to animals...
