Guest guest Posted December 6, 2004 Report Share Posted December 6, 2004 Hi, I was thinking of what to make for Xmas lunch and wondered if anyone has links to or ideas for a nice vegetarian Xmas lunch. Since I am in Australia, it may be hot so I was thinking along the lines of some entrees like small crackers with some fancy Avocado or other topping, some home made soup and garlic bread, a baked festive loaf of some type (something really nice such as a backed nut/lentil loaf?) and salads eg home made potato salad with diced green apples (Granny Smiths) and walnuts, coleslaw and a nice green salad with some semi-sundried tomatoes, cherry tomatoes and whatever, and some small plum puddings (no lard etc in them) with some brandy butter or such and nice coffee. It's kind of a tradition in my family to do lasagna, but I veganized it and put it in large shells, though you can do it with lasagna noodles too. Sorry I can't help with your menu - from what I gather the menu is usually similar to an American thanksgiving - so you could go the squash route.... Boil them till they are not quite cooked. Drain. Take a brick of firm tofu (not silken) and put it in the food processor with: 2/3 c nutritional yeast, 1 tsp garlic, 1 tsp oregano, 1 tsp lemon juice, a pinch of sugar or other sweetener. Blend until texture is similar to ricotta, Add 1 brick thawed frozen spinach and blend till just combined. Stuff shells with tofu mix. Place into a 9x12 (or thereabouts) baking dish. Cover with 1 1/2 jars of your favorite pasta sauce (I like bertolli olive or barilla tomato and basil). If desired, you can brown a little lightlife " Gimmie Lean " faux sausage and stir into the sauce before pouring over the top. Bake at 350 till sauce is bubbly. Serve with salad and fresh bread. It's so easy but tastes SO good. This dish also freezes well, so make a double batch and freeze one for dinner later when you don't feel like cooking.
