RECIPE: Festive Pasta Salad

Festive pasta salad

 

The inspiration for this was a potluck on one day, and another one the

very next day! I looked for different colors of vegetables to make a

pretty holiday salad that could be divided to satisfy both potlucks.

 

1-12 oz. pkg garden spirals (multi-colored rotini pasta) approx 4 to 5

cups, cooked, drained, and cooled

1 small yellow squash, cut into quarters lengthwise then sliced

1 orange bell pepper, cut into 1 " strips then sliced

2 stalks celery, sliced

1 small cucumber, cut into quarters lengthwise then sliced

2 Roma tomatoes (other types may be used but should be seeded first),

quartered then sliced

1 jar marinated artichoke hearts, cut into smaller pieces, with liquid

1 can black olives (6 oz drained weight), sliced (I cheat by using my

egg slicer)

1/2 cup Italian style salad dressing

Other seasonings to taste (salt, pepper, etc)

 

Cut up vegetables while pasta is cooking, placing in large mixing

bowl. Cool pasta rapidly in cold water, rinse well and drain well.

Spread pasta on top of vegetable mixture and drizzle with salad

dressing. Mix well. Chill at least 4 hours or overnight (the longer

it is kept the better it is).

 

Makes about 12 cups

Bet this was popular and the potlucks... am guessing these were veggie potlucks

mostly?

I am hoping to find some veggie gatherings when I move up to Ptown. Thanks for

Hi David,

 

No, I am surrounded my meat-eaters...but it's always my sincere hope

to plant the idea in their heads that it is possible to eat well

without eating meat.

 

When you move to Ptown, be sure to check out Northwest Veg...their web

site is http://www.nwveg.org/ I went to one of their dine-outs and had

a wonderful time.

I live in a house of meat eaters too. My uncle loves animals,and so he has gone

veggie with me, but there is still the hubby and two boys, one 21 and the other

17. What I have been doing is handing out literature every day. Nothing to

lengthy so I am sure they read it out of curiosity. I make the print bold and

very big, so it looks easy to read for their little minds (tee hee) usually a

paragraph. Last paragraph I gave them, yesterday, was about the living

conditions of cattle so we can have burgers and franks. IT didn't stop them from

eating meat, but their faces looked sad and /or disgusted after reading it, so I

know I planted a seed.

I wish I could just sleep deprive them and sit them under a lightbulb, but then

I may get locked up, so this will have to do.

I also live in a house divided;) We're fairly friendly about it - and

the meat consumption has decreased dramatically on the omnivore front.

My husband does veggie 98% of the time, with meat still being a rare

occasion for him. When we do buy it for him, it's either from an

independent Halal butcher down the road from us, or from Whole Foods,

which does the free-range thing. While it would be LOVELY (IMHO) if the

whole world woke up suddenly and everyone went Vegan, I know that it'll

never happen, so I comfort myself knowing we at least manage an impact

against the factory farms/dairies by not financially supporting them.

Thanks for the link Cat... appreciate it :]. This wkend I rented a basement

studio in the

St.Johns area of Portland [north near the Island]. I hope to have lots of nature

walks

and think I'm gonna enjoy my new surroundings. I will be sharing a house with

two

women - one is a vegetarian at least. She said that she used to be vegan but

found it

hard to do back in the 70s. I will show her some wholesome recipes.

I had a job interview also and think that I have a good chance of getting it.

Once again

craigslist.com has made my life easier since i found them both listed there!

I have one friend in Portland and he wanted to take me out for drinks [not

usually

something i do] but wanted to have fun on my first night in town. Anyway, the

first

place we went into was a good omen since an old friend [a woman i dated briefly

in '88]

was there and made me feel welcome. I hope to make new veggie friends though i

like my

quiet walks too... Happy Holidays everyone! David*

PS. Think it would be kewl to actually meet people i only known via groups so

dont

heisitate to say hi if your in the area.

Chanda..

Planting a seed is the best u can do. We all need to feel loved and accepted

regardless if

we see eye to eye on things. We all need to make choices for ourselves so am

glad that

you're giving them space to find their own way. It is frustrating when others

can't

fathom what seems obvious but everything is a process and no one is at the same

place in

life. I give information without expectation and think it best that you don't

torture

them... lol. :] David*

aww you're no fun David!!

Tonight I pulled a pound of beef out of the freezer, I said to hubby with a

frown, " look, the cow's name was Charles, just like my son! " the pack said,

GROUND CHUCK. ar ar ar.

There are 6 of usin the house, I already turned my uncle totally veg, and one

son has agreed to stop eating meat so often. The littlest one is 7, so I still

may have chance with her.

Even hubby was saying he want to cut down on meat for health reasons, and also

lose some weight, I was o happy, then the next morning he ate 4 sausage patties

with his eggs, LOL. Oh well.

Anyway, thanks for the support, it's great to be able to talk.

I'm jealous of you!!! You can meet Jessica!!!

 

I sent a post to the group, but don't see it. It's the address for

an interview with Jessica Porter who wrote a funny and sounds like a

wonderful book on macrobiotics. But while scanning the posts I saw

She also teaches macrobiotic cooking, hosts a twice-monthly radio

With all her free time, she recently wrote a book, " The Hip Chick's

Guide to Macrobiotics: A Philosophy for Achieving a Radiant Mind and
