I read somewhere that new potatoes were less starchy than older potatoes. I believe someone wrote new potatoes were the ones with the red skins. That is not true actually. The ones with the red skins are actually a different variety. I believe new potatoes are the smaller newer potatoes you see in the supermarket and the larger older ones are older potatoes. http://www.westernpotatoes.com.au Kind regards, M.
