muffins w/wheat bran & applesauce

Hello. I just checked out the recipe section looking for some muffin

recipes. I am particularly wanting to use wheat bran and applesauce.

Does anyone have a recipe using these items?

I did find some recipes but they all call for buttermilk, which I'd

rather not use (so fattening!).

Any ideas would be great. I'm trying to get both of us to eat

breakfast more often and muffins with some protein would help us both.

Thanks

This is from my Vegetarian Times cookbook - I have not tried it, but

it sounds kind of good.

Fruity Bran Muffins makes 12

1 1/4 cups whole wheat flour

1/2 cup oat bran

1/4 cup wheat bran

2 tsp baking powder

1 Tbs veg oil

1/4 cup honey

1 whole egg (or 2 egg whites), beaten

2/3 cup skim or soymilk

1/2 cup unsweetened applesauce

1/2 tsp vanilla extract

2 medium ripe bananas, mashed

Preheat oven to 350. Grease muffin tins.

Stir together dry ingredients & set aside. In a bowl, combine oil

and honey. Whisk in the egg, milk, applesauce & vanilla. Combine

dry and wet ingredients until just blended. Gently fold bananas

into batter. Spoon batter into muffin tins and bake muffins until

just begin to brown, about 20 to 30 minutes. Serve warm.

Variations - sub 1 cup blueberries or 1 cup chopped cranberries & 3

Tbs sugar, for the bananas.

Another thing you can try is getting a regular bran

muffin recipe that calls for a good amount of oil and

substituting applesauce for all or part of the oil.
