Put them in the food processor with smashed garlic, and the juice of one medium sized lemon for each can and a half of " garbanzos " - tahini to taste, sea salt, and olive oil. Some of the variations and mixtures we've tried have included: Avocado Guacamole Roasted red peppers Salsa We've used pita chips, bagel chips, tortilla chips, and have also rolled it up in a flour tortilla and added a little brown rice and green leaf lettuce (eaten warm). Eat with tortillas or crackers. Guest guest Posted January 26, 2005 Report Share Posted January 26, 2005 Another variation of Hummus that avoids the solanaceous peppers, tomatoes. ......................... 1 c. dried chickpeas, soaked overnight; next day wash them well under running water;cook in 6 c. fresh water until peas are soft and mush easily. (about 45 min.) 1 t. sea salt 2-3 lemons 2T cold water 4-5 sprigs of parsley or cilantro 4 garlic cloves 5 generous T. tahini 1 t ground cumin or to taste 2 T. olive oil Put garlic, lemon juice, chick peas,cumin and tahini in blender or food processor, blend until smooth. Add water if more liquid is needed. Serve on platters in a thin layer. Make a design on top as grooves, and dribble olive oil into the design. Garnish with parsley or cilantro. I like pomegranate seeds on top. One can also toast pine nuts and sprinkle them on top so each platter can look a little different. Eat as a dip with pita bread or as a dip for vegetables.
