During lunch today I happened to find an article on cooking okra and getting rid of the slime. The chef said to boil it and add 1 tablespoon of vinegar to the water. Guest guest Posted January 26, 2005 Report Share Posted January 26, 2005 My favorite way of desliming okra is to saute okra slices in a little olive oil until it gets nice and green. Then use it in any dish you want. I usually toss in a little coriander seed while it is sauteeing -- makes the flavor nicer. THe oil also helps to preserve antioxidants. It doesn't take much oil - just a thin layer to coat the pan. If you have baby okra pods you can saute them whole. Did you know okra is from a plant closely related to hibiscus?
