Guest guest Posted January 26, 2005 Report Share Posted January 26, 2005 A good recipe for a cold day :-) Quick and easy. This may not sound like much but it is very comforting and tasty. Good with a veggie pizza on the side, or maybe a veggie burger. Vegan even! 6 cups water 4-5 veggie boullion cubes (or use equivalent amount of veggie broth instead of water/boullion) 1 medium onion, diced 2-3 medium carrots, diced 2-3 potatoes, diced 1/3 cup rice 1 box of frozen chopped spinach -or- 1 bag fresh spinach, chopped salt & pepper to taste Saute onions in a little oil until they begin to brown. Add all other ingredients, bring to a boil and simmer 15 minutes or so until potatoes and carrots are soft. Add spinach, cook about another 15 minutes until spinach seems cooked. The rice is regular white rice that takes around 20 min to cook. If you want to use brown rice or some other more flavorful long-cooking rice, you might want to cook it first in the broth before adding the carrots, potatoes etc. cheryll Quote Link to comment Share on other sites More sharing options...
