....or vegan (it uses honey). But for the veggies who

need something sweet...

 

 

 

 

Tzimmes

 

INGREDIENTS:

1 bag carrots

5-6 sweet potatoes

1/2 cup pitted prunes

1/2 cup honey

1 cup orange juice

1/2-1 teaspoon salt

1/4-1/2 teaspoon cinnamon

margarine

 

PREPARATION:

1. Boil water in large pot.

2. Wash and peel carrots and sweet potatoes.

3. Place carrots and potatoes in boiling water. Cover

pot. Let cook until tender but firm.

4. Preheat oven to 350° Fahrenheit.

5. Oil shallow baking dish.

6. Drain carrots and potatoes. Place in baking dish

with prunes. Mix gently.

7. Mix orange juice, honey, salt, and cinnamon

together in a small bowl. Pour over casserole.

8. Dot top with margarine. Cover with foil and bake at

350° Fahrenheit for 30 minutes. Stir gently and bake

uncovered for 10 minutes.

Wow. Now this would have been great to replace that same ole, same

ole sweet potato casserole on thanksgiving. Yum. Thanks.

This could easily be made vegan with the use of

agar...just did it:)

That looks really good ! Do you think you could

replace the prunes with raisins or dried apricots ?

If you added apples, should they be cooked a

little first ?

brown rice syrup is a great substitute for honey so this can easily

become vegan *G*

If you try it with other fruit, let me know how it

comes out.

How about blond raisins?

As far as cooking apples first, the texture of the

finished product is usually a soft sold... not quite

mashable.
