I also like tahini on toast with a little salt. Another idea is avocado mashed maybe with garlic on toast. And I like cucumber sandwiches also. And tomato sandwiches with a lot of pepper. You can make a tofu sandwich filling my mashing tofu with some mayo and hot sauce and pepper--some sliced olives, if you like them. I like to saute mushrooms with red bell pepper and maybe garlic and some brocolli and season it with pepper and soy sauce and put that in a bowl--it's really good cold, in my opinion. I also like to eat hummus with a spoon--no crackers necessary. I enjoy experiementing with different forms of pasta salad. You can use italian salad dressing as your dressing, but I love mayo-based dressing. A couple says ago I made a pasta salad with whole wheat maccaroni, edamame, mayo, salt and pepper, apple cider vinegar, sauted mushrooms. Guest guest Posted March 18, 2005 Report Share Posted March 18, 2005 I make pasta salads, breaded seasoned baked tofu and take on a wheat bun, portobello mushroom sandwiches, love cold spaghetti, there's a wonderful recipe in our files for a lentil loaf and it's great in a sandiwch too, I make soup and fill up freezer quart sized bags and store in the freezer and grab a bag of soup to take for lunch, eggless egg salad sandwich. Guest guest Posted March 18, 2005 Report Share Posted March 18, 2005 Falafel :^) 1 package humus mix 2 tablespoon olive oil 1/2 cup lemon juice 1 1/2 cup warm water 2 tablespoons parsley, (optional) 1-2 garlic cloves, pressed (optional) 1 package falafel mix 1 cup water vegetable oil for frying To make the humus, place the contents of the humus mix in a bowl. Add the warm water, olive oil, and lemon juice. Stir until well blended (using a spatula works best). Refrigerate for about one hour. For variety, you can add fresh chopped parsley and garlic to taste. To make the falafel, place the contents of the falafel mix in a large bowl, add water and stir well. Let stand 15 minutes to absorb the water. With your hands, shape the mix into 1/4 inch thick patties, each about the size of a silver dollar. Heat a generous amount of the vegetable oil on medium high heat. Please watch the oil, because it needs to be just at the temperature to fry, and no hotter (don't let the oil smoke). Fry the falafel patties until brown and crisp on the outside. You must watch them carefully so as not to overcook them or they will become dry inside. Use a spatula to move them around so they don't stick to the bottom of the pan. When the falafel patties become golden, drain the excess oil by placing them on a plate covered with paper towels. Basically, there are 3 kinds of charcoal used in the processing. 2 non-animal, one bone char. There are 2 kinds of white sugar: beet and cane. Only cane is filtered this way, so there's a good chance you aren't getting bone char filtered. I consider it like...if the person who made your tofu ate a hotdog, is the tofu still vegan? Vegan is about what's reasonable. Honey is also a big debate, though yeah, it's not strictly vegan: Personally, I sometimes have honey. My supplier is a sweetheart. And the bees can leave if they so choose. There's also maple syrup (love it!), corn syrup, unprocessed sugar, rice syrup (not that good in my opinion), molasses (yum!) etc. Veronica P.S. Another debatable issue: In Animal Liberation bivalves such as clams, scallops, oysters, are considered vegan because they have no CNS and are considered non-sentient. So...there are a lot of iffy places you can go when philosophically discussing veganism.
