Also taste great on top of a tostada, inside a burrito and I use in as a filler in my tacos with beans on top and lettuce. " Green Chili Hominy " 2 tblsp canola or olive oil 3 garlic cloves minced 1 medium onion chopped 1 tsp cumin 1/2 tsp coriander or several chopped fresh cilantro leaves 1 29 ounce can of hominy 1 4 ounce can chopped mild green chilies (Ortega) * salt & pepper to taste. Chopped green onions and grated cheese for top are optional. Heat oil in a wide skillet over medium heat and add garlic, onions, cumin and coriander or cilantro. Cook stirring occasionally until onions are soft, about 10 mins. Add hominy and chilies and cook to heat through and liquid is evapoated. Taste and season with salt and pepper if desired. * Sprinkle green onions and grated cheese on top if desired. Ready to serve. " A smile is a curve that sets all things straight. I love hominy and never knew how to use it until I came across this recipe a few years ago. Everyone that tastes it wants the recipe and makes this often too.
