Guest guest Posted March 28, 2005 Report Share Posted March 28, 2005 Here is the lentil loaf recipe i promised to share. i made it the day ahead and let it set in the refrigerator overnight so the flavors could blend. i think it tasted very good, but the texture was a bit mushy or softer than i had hoped. Next time i plan to leave out the extra broth from the lentils; i truely don't think the recipe needed it. Oh, and i cooked my lentils in an un-chicken broth to add flavor to the dish. i think if i had only used plain water the recipe might have been bland. Lentil Loaf 2 cups cooked lentils 1 cup bread crumbs 1/2 cup shredded zucchini 1/3 cup onions, chopped 2 Tbs. vegetable oil 3 Tbs. soy sauce 1/2 cup cooked rice 1 tsp. sage 1/2 tsp thyme 1 tsp. curry powder 2/3 cup liquid from cooked lentils 1 tomato, sliced Mix all ingredients together except for tomato. Bake in a non-stick loaf pan for 15 minute at 375û. Remove loaf from oven and top with tomato slices. Return to oven and cook additional 15 to 20 minutes. Mine came out pretty mushy~ like thick mashed potatoes! i guess i thought it would firm up considerably after i baked it... not to mention leaving it overnight in my refrigerator. But i was wrong. *lol* Next time i am going to make sure i have a nice stiff mixture before i form it into the loaf pan to bake. i think my leftovers will be good in sandwiches. ~ pt ~ What sunshine is to flowers, smiles are to humanity. Try putting it in a colandar and giving it a good push to get the excess moisture out...I salt mine a bit (sea salt, but the celtic would be good) I think it may help, but then watch the amount of salt you have altogether. Salting and draining or squeezing might have helped though. i should have gone with my gut and NOT added the 2/3 cup extra liquid the recipe called for. But usually when making a recipe for the first time thru, i try to follow the directions as written. Next time ! i like Freddies!
