Hi Jenni, aebleskiver soy crepe recipe

I'm thinking I really need that pan to make it right ??? I've made

crepes using the batter from the silk website.. do you think that

would work?

 

Soy Crepes 

Ingredients:

 

1/2 cup unbleached flour

1/2 cup whole wheat pastry flour

1/4 cup soy flour

1/4 cup nutritional yeast (optional)

1/2 teaspoon baking powder

1/2 teaspoon salt

3 cups Silk Organic Plain Soymilk

 

Instructions:

 

Mix the dry ingredients and make a well in the middle. Pour in the

soymilk and whip together. The batter should be very thin. Heat a 10

inch nonstick crepe pan over moderate heat, and spray with nonstick

spray. Pour in about 1/3 cup of the batter, tilting and moving the pan

so that the batter covers the bottom of the pan with a thin coating.

Cook until it is browned underneath and starts to pull away from the

edge of the pan. Carefully flip it over and brown on the other side.

Serve hot.

 

Nutrition Information:

Per crepe: Calories 85, Total Protein 5 g, Soy Protein 3 g, Fat 1 g,

Carbohydrates 13 g, Calcium 29 mg, Fiber 2 g, Sodium 152 mg

Serving Size: nine 10-inch crepes

Preparation Time: 5 minutes

Cooking Time: 10 minutes

that sounds like it might work but put a little oil in the batter. You will

need that pan for sure. You turn the balls with a long metal knitting needle.

Do you have a cooking store near you? Believe me they end up in the thrift shop

all the time and no one knows what to do with them so try there first. I have

found at least 4 there over the years and not even looking for one. i end up

buying the pan for a few dollars and teaching someone how to make them and

giving them the pan.

I don't think it will achieve the puffiness...you need the lift from

the egg white's...is there a vegan egg white product??

 

I think I need those pans too...

I promise you two that I will be at the thrift shop looking for you. The boxed

pancake mix works if you make it a little thick but the egg white lift is

probably the best. I don't know what they put in the pancake mix. is there a

vegan mix?

I think there is a vegan pancake mix.. probably at pangea.com , I make

pancakes at home w/o a mix... I think baking powder gives it the lift..

 

I wonder if that would work...

 

there is a vegan egg substitute.. although I usually use a flax meal

'egg'... ( 1 tbsp flaxmeal, 2-3 tbsp water)

There's a fabulous vegan crepe recipe (2, I think) in The Paris Cook Book.

They come out perfect using a plain frying pan. Light, crispy, wonderful. I

filled them with a nice Ragout. Yum!

 

Though it doesn't look like crepes are what you're trying to make from the

link, but if you want crepes, these kick ass! :)

NRG egg replacer says it can be used in place of whites. I've only used it

in place of whole eggs, though. Works well!

Oh and if you wanted a pancake mix, one of the Aunt Jemima ones is vegan

and tasty. :)
