I've made crepes using the batter from the silk website.. do you think that would work? Soy Crepes Ingredients: 1/2 cup unbleached flour 1/2 cup whole wheat pastry flour 1/4 cup soy flour 1/4 cup nutritional yeast (optional) 1/2 teaspoon baking powder 1/2 teaspoon salt 3 cups Silk Organic Plain Soymilk Instructions: Mix the dry ingredients and make a well in the middle. Pour in the soymilk and whip together. The batter should be very thin. Heat a 10 inch nonstick crepe pan over moderate heat, and spray with nonstick spray. Pour in about 1/3 cup of the batter, tilting and moving the pan so that the batter covers the bottom of the pan with a thin coating. Cook until it is browned underneath and starts to pull away from the edge of the pan. Carefully flip it over and brown on the other side. Serve hot. You turn the balls with a long metal knitting needle. Do you have a cooking store near you? Believe me they end up in the thrift shop all the time and no one knows what to do with them so try there first. I have found at least 4 there over the years and not even looking for one. i end up buying the pan for a few dollars and teaching someone how to make them and giving them the pan. The boxed pancake mix works if you make it a little thick but the egg white lift is probably the best. I think baking powder gives it the lift.. I wonder if that would work... there is a vegan egg substitute.. although I usually use a flax meal 'egg'... ( 1 tbsp flaxmeal, 2-3 tbsp water) hmmm... Guest guest Posted March 29, 2005 Report Share Posted March 29, 2005 There's a fabulous vegan crepe recipe (2, I think) in The Paris Cook Book. They come out perfect using a plain frying pan. Light, crispy, wonderful. I filled them with a nice Ragout. Yum! Though it doesn't look like crepes are what you're trying to make from the link, but if you want crepes, these kick ass!
