New to group Thanks for the Invite

Hi,

I'm Lyn, new to the group, new to vegetarianism. Thank you for the

invite. Although I like to cook, I am no chief..LOL. Also I am just

starting to try various veggie products, etc. I hope to be able to

round out my menus with a lot of help and your experiences :)

 

 

I do have a quick, easy recipe that I tried just yesterday for taco

salad.

 

1 package LightLife Smart Ground (actually could have used 1/3 or

1/2 for only one person.. but hey leftovers)

 

1 pack of taco seasoning

 

1 teaspoon of oil (if not using a non-stick skillet)

 

Tomato

Salsa

Cheese (I prefere shredding block cheese)

Lettuce

Taco shells or chips

Other toppings of choice

 

Cook the Smart Ground, add taco packet, stir.

Add salsa either in the mix or on top

Add toppings you like.

 

It's quick, easy, and full of veggie protein. Yummy!

Hi Lyn and welcome!

I have been a veggie for oh maybe 4 months now, and I will never go back.

I think you meant chef and typo'd chief? LOL, well I am neither a chef or chief

alike you, LOL.

Just take it easy. There are lots of recipes for vegetarians but don't overwhelm

yourself. What I do is when I make dinner for all of the flesh eaters I make

them their flesh, and I eat the other stuff. I try to make JUST ONE item that is

an extra special treat for myself, and then just eat the side dishes that I have

prepared with the meal. Mac and cheese is a big one. Buttered stringbeans, peas

in garlic butter etc. I also got a breadmaker, and try to center the meal around

the bread rather than anything else. Breadmakers really rock. Don't worry about

the carbs, we should not (in my opinion) cut out carbs. I found that when I

became a vegetarian I was eating healthier and my body adjusted, even though my

carbs increased I lost 20 pounds and am where I want to be weightwise. A friend

of mine never could gain weight, and she gained weight when she became a veggie.

I think it's very balancing, But anyway, take your time and don't overwhelm

yourself and blessings to you,
