Chai Butter Cookies 1 cup instant Chai tea mix 2 eggs 1 cup butter 1 1/3 cups sugar 3 1/2 cups flour 1 tblsp baking powder 1 tsp salt * extra sugar in bowl to roll cookies in. I roll them in turbinado In a large bowl cream butter, sugar, chai tea mix until light and fluffy. Beat in eggs one at a time mixing well. Combine flour, baking powder and salt and mix well, then blend into the creamed mixture until all the dry ingredients have been absorbed. Cover dough and refrigerate one hour for flavor to set and dough is easy to roll between hands. Preheat over to 400 degrees but I usually bake mine with oven set to 375. Roll cookie dough into walnut sized balls and then roll into sugar. Place cookies onto greased cookie sheets about 3 inches apart and flatten slightly using a fork. Bake 10-12 minutes, just until the edges are brown. Remove from sheets and cool on wire racks. A friend at work was in the hospital longer than expected and chai tea is her favorite beverage. I took her a plate of these and she was ready to jump out of the hospital bed with a huge smile on her face...............enjoy! " A smile is a curve that sets all things straight. I have found it at the Ralph's Market out here also and I can't remember a name brand off hand. I have tried others and Lipton is my favorite, but since all tastes are different maybe you should try different brands and find your favorite.
