Chai Butter Cookies (recipe post vegetarian not vegan)

If you like to drink chai this is a great recipe..............

 

Chai Butter Cookies

 

1 cup instant Chai tea mix

2 eggs

1 cup butter

1 1/3 cups sugar

3 1/2 cups flour

1 tblsp baking powder

1 tsp salt

* extra sugar in bowl to roll cookies in. I roll them in turbinado

 

 

In a large bowl cream butter, sugar, chai tea mix until light and fluffy. Beat

in eggs one at a time mixing well. Combine flour, baking powder and salt and

mix well, then blend into the creamed mixture until all the dry ingredients

have been absorbed. Cover dough and refrigerate one hour for flavor to set and

dough is easy to roll between hands.

Preheat over to 400 degrees but I usually bake mine with oven set to 375. Roll

cookie dough into walnut sized balls and then roll into sugar. Place cookies

onto greased cookie sheets about 3 inches apart and flatten slightly using a

fork.

Bake 10-12 minutes, just until the edges are brown. Remove from sheets and cool

on wire racks.

 

A friend at work was in the hospital longer than expected and chai tea is her

favorite beverage. I took her a plate of these and she was ready to jump out of

the hospital bed with a huge smile on her face...............enjoy!

donna,

this recipe looks so good. i love chai tea. i don't

remember ever seeing a chai tea mix. can you

recommend a brand?

Hi Susie,

They have one at Trader Joe's if you have that store in our area. I have found

it at the Ralph's Market out here also and I can't remember a name brand off

hand. I don't have any at home right now but it's on my grocery list so I can

email you over the weekend with the info...........Donna

LIPTON!!!!

I have tried others and Lipton is my favorite, but since all tastes are

different maybe you should try different brands and find your favorite.

thanks donna,

unfortunately, we don't have a trader joe's or similar

store within an hour of my house. :(

when i make chai tea, i make it from scratch using

whole spices...so i've never looked for mixes (not

even sure if i realized there was such a thing) in the

stores. but, if lipton (as chanda mentioned) makes

one, then i'll probably have no problem finding one.

i also briefly looked around online for a mix recipe

and there are several out there....that may be an

option too.

so, thanks again and don't worry about finding a brand

name for me, i'm sure i'll find something. :)

Susie - I think the critical part of the instant Chai mix is the

instant tea in there... so if you like your chai recipe - maybe just

mix the spices in instant tea powder, rather than having to find a

complete mix...
