Then i turned the heat down to a simmer, covered the pan, and cooked them until they were tender. Most cookbooks where they list bean cooking times suggest that red lentils only need about 20 minutes to cook and brown lentils about twice that [40 to 60 minutes]. However, i always find they need more than that to have the texture i prefer. i didn't time how long i cooked them in this recipe prior to adding them to the loaf mixture, but i know it was a bit over a half hour.
