" Pakoras " 2/3 cup gram flour (it's a flour made from ground chickpeas) 5 tblsp. cold water 1/4 tsp. baking soda 1/4 tsp. cayenne pepper (1/2 tsp if you like it hot) 1/4 tsp. cumin powder 1/4 tsp. tumeric 1/4 tsp. ground cardamom (optional) 1/2 cup onions finely chopped 1/2 cup potato peeled and finely chopped 2 tblsp. chopped cilantro 1 tsp. salt pinch of saffron (optional) Combine flour and baking soda. Add cold water slowly and stir until moistened. Add the rest of the ingredients and lightly mix until blended but do not over mix. Drop by tablespoonfuls into hot oil. Fry until both sides are a golden brown. Note: Don't put too much dough in at once, you want the center to cook. " The afternoon knows what the morning never suspected. " Old Swedish proverb.
