Chanda, yup, it's pretty easy! Glad I got back online in time to catch this! I love sharing recipes, but have been so swamped this week. 2 cans of light coconut milk 6 tbsp superfine sugar (if you don't have superfine, just grind some up in a coffee grinder) sm. pinch salt splash of vanilla extract Mix together until the sugar is dissolved. I freeze it in an ice cream maker now, but before I had one, I poured it into a shallow pan (big, but small enough to fit in the freezer!). Put it in the freezer and every half hour or so, scrape it all up with a fork. Alternatively, pour into ice cube trays and freeze solid, then blend on " ice crush " in your blender!
