We usually eat it as a side dish. but that is getting boring. Any ideas would be welcome. We need to eat the corn from last year before this year's crop is ready. Guest guest Posted April 17, 2005 Report Share Posted April 17, 2005 you can add corn to corn bread! make corn chowder, corn & potato soup. corn & peas w/ rice is a fave lately here.. we add braggs amino acid, vegan margerine, granulated garlic, & nutritional yeast.. corn can be added to salsa, to chili, soups... enchiladas! most any casserole type dish.. hmmm.. Guest guest Posted April 17, 2005 Report Share Posted April 17, 2005 Hi Julie, Remove from cob and saute in oilve oil with onion, tsp. of Italian seasoning, chopped onion, chopped red sweet peppers and sprinkle parmesan on top before you serve or if you are vegan it will be fine with a touch of sea salt and no cheese. I always add to cornbread also. Or I boil it and cut off the cob and put a mound in the center of my mashed potatoes. It's really good in with your dinner salad. I like to use corn in salad - I mix it with diced cucumber and tomato...or with beans... Here is another fav: quarter cup corn, 1 med avocado diced, 1 med tomato (or several cherry) diced, some jalapeno, 1/2 small onion or 2 green ones diced, 2 tsp fresh lime juice & salt. YUMMY! Also you can make chowder if you eat dairy.. saute an onion diced, some garlic and thyme in butter till pretty soft, then toss them with 1/4 cup flour till coated and it smells nutty - add about 6 cups veg broth, 2 cups cream, 2 or so potatoes diced, 2 or so cups corn - bring to a boil and cook till potatoes are done - add s & p to taste I love this chowder...mmmmm m Quote Link to comment Share on other sites More sharing options...

And chowder. I'd never get sick of chowder. You can also roast some and put it in salsa. I can't imagine getting sick of corn. I just never thought to put corn in things like salad or over rice. We probably have 40 pounds to get through before the end of July or so. Most people overcook their corn. Corn should never be rapidly boiled and never longer than 5 minutes. Same with shucked corn. Just bring your water to a boil and put the corn (cobs) into simmering water for 3 minutes, just so it's heated through.
