" Spaghetti Squash Salad " 1 spaghetti squash 1 cup fresh mushrooms sliced 1 cup green onions sliced 1 red or green pepper chopped 1 8 oz bottle of creamy garlic or Italian or a balsamic Italian dressing * option you can add one clove crushed garlic, sprinkle sunflower seeds over top of salad, add slices olives, tiny grape tomatoes, little feta cheese on top, peas, etc. Cut squash in half, remove seeds and boil for 25-30 mins. until tender. Remove from pot and cool. Scrape squash pulp from rind, should be about 4 cups. Drain on paper towels to remove excess water. Place in large bowl. Add mushrooms, onions, peppers and dressing.
