I made this yesterday and my nephew and his friends ate this off the cooling rack and left me a handful of bits to taste. " Cantaloupe Bread " 1/2 of a medium cantaloupe, pureed in blender to make one cup. 1/3 cup canola oil 1 cup sugar 1 tsp. vanilla 2 eggs, slightly beaten 1 1/2 cups all purpose flour 2 tsp.baking powder 3/4 tsp. cinnamon 1/4 tsp. salt 1/2 cup coarsely chopped walnuts or pecans (I used walnuts) Preheat over to 350 degrees. Generously grease bottom only of a 9 X 5X 3 inch or 8-1/2 X 4 X 2-1/2 loaf pan. Cream sugar, oil and vanilla. Add eggs and cantaloupe puree, and mix. In separate bowl sift flour, baking powder, cinnamon and salt. Add dry ingredients to wet mixture and mix until blended. Stir in nuts. Place batter in prepared pan and bake 45-55 minutes until golden brown. Test by inserting toothpick in center and it comes out clean. Cool 10 minutes on wire rack.
