Guest guest Posted May 13, 2005 Report Share Posted May 13, 2005 depending on where you live, fresh okra can be hard to find. i can usually find it in the frozen veggie section at the grocery store. for this soup, i like to add some chopped celery in when i saute the onion. i serve this soup over rice and pass the Tabasco sauce at the table. Vegetable Gumbo Soup 4 tablespoons butter 1 onion, finely chopped 4 cups vegetable stock 1 green pepper, finely chopped 1 cup okra, chopped Pinch of cayenne pepper 2 cups canned tomatoes, chopped Salt and pepper Melt the butter in a large pot. Add the onion and sauté, stirring frequently, until transparent. Add the vegetable stock, green pepper, okra, cayenne and tomatoes. Simmer, partially covered, for one hour.
