When I make this I serve it with the savory vegan sauce I posted a few weeks

ago. I can send it again unless you have a special white sauce you like to use.

Hopefully you can turn this into a vegan dish for yourself...............Donna

" Neptune Loaf "

1/2 bell pepper, chopped small

1 1/2 stalks celery, chopped small

2 cups assorted vegetables chopped to bite size pieces (carrots,

zucchini, broccoli, cauliflower, peas etc.

2 eggs, beaten

12 oz. whole wheat noodles (ziti or penne size)

3 cups grated cheddar cheese or soy cheddar cheese

3 Tofu Burgers or 1 pkg. firm tofu chopped small (if using plain tofu

add a little extra Bragg's, Tamari and kelp powder).

1 tsp. Bragg Liquid Amino

1/2 tsp. granulated garlic

1/2 tsp. kelp powder (don't skip this ingredient)

1/2 tsp. Tamari

1/2 cup onion, chopped small

Preheat oven to 350 degrees

Lightly oil a 9 X 12 baking pan.

Cook whole wheat noodles according to package directions, drain and rinse.

Steam the 2 cups of assorted vegetables along with the bell pepper, celery and

onion for 3-5 minutes.

Mix all the ingredients together in a large bowl. Press into the prepared

baking pan. Sprinkle a Little extra cheese on top and bake for 40-45 minutes.
