Jenni and Mel here's the Avocado Bread recipe.......I'm sure it came be made vegan ???

I found this recipe last year on the Internet and never tried it. Didn't want

to toss all my ingredients out if it ended up a glob....LOL Funny because when I

was placing the batter in the pan it looked like a glob to me..........hehehehe

I was pleasantly surprised last night when I used my ripe avocado to make this

delicious tasting quick bread.

 

" Avocado Bread "

 

In a large bowl mix together:

 

2 cups all purpose flour

1/2 tsp. baking soda

1/2 tsp. baking powder

1/4 tsp. salt

3/4 cup sugar

 

In a small bowl mix together :

 

1 egg beaten

1/2 cup mashed avocado (I used a medium large avocado size)

1/2 cup buttermilk

1 cup finely chopped walnuts or pecans

 

Preheat oven to 350 degrees. There is no oil in this recipe. I kept thinking

it was missing by accident.

Add the avocado mixture to the flour mixture and stir just to moisten. Bake in

a greased and floured 8 1/2 X 4 1/2 loaf pan.

Mine baked in 43 minutes but watch as the recipe stated 50 minutes. Insert

toothpick to test. Cool 5 minutes and remove from pan and continue cooling on

wire rack.

easily veganized!

I'd drop the egg... or replace it with a flax egg (for added omegas!)

buttermilk... use soy milk

 

if you don't want to use the sugar you could substitute a liquid

sweetener, in which case the flax egg might not be needed..

or use turbinado sugar, or fructose.

 

 

this sounds interesting! =)

oh.. and just because I'm difficult... i'd probably use whole wheat

flour.. or whole wheat pastry.. or whole wheat and unbleached....
