Didn't want to toss all my ingredients out if it ended up a glob....LOL Funny because when I was placing the batter in the pan it looked like a glob to me..........hehehehe I was pleasantly surprised last night when I used my ripe avocado to make this delicious tasting quick bread. " Avocado Bread " In a large bowl mix together: 2 cups all purpose flour 1/2 tsp. baking soda 1/2 tsp. baking powder 1/4 tsp. salt 3/4 cup sugar In a small bowl mix together : 1 egg beaten 1/2 cup mashed avocado (I used a medium large avocado size) 1/2 cup buttermilk 1 cup finely chopped walnuts or pecans Preheat oven to 350 degrees. There is no oil in this recipe. I kept thinking it was missing by accident. Add the avocado mixture to the flour mixture and stir just to moisten. Bake in a greased and floured 8 1/2 X 4 1/2 loaf pan. Mine baked in 43 minutes but watch as the recipe stated 50 minutes. Insert toothpick to test. Cool 5 minutes and remove from pan and continue cooling on wire rack. " In one's family, respect and listening are the source of harmony.
