Guest guest
Hope everyone is having a nice Memorial Day with lots of good food. I made many dishes and running back to the kitchen in a few minutes. I got my " Native Foods " cookbook for my birthday and here's a good soup I tried last night. Cravin' Corn Chowder " 1/4 cup olive oil 1 onion chopped 3 cups corn kernels, fresh or frozen (2 cups for soup & 1 cup for garnish) 2 medium potaoes, cut into 1 inch cubes 1 Tbsp. sea salt 1/2 tsp. black pepper 1 1/2 tsp. dried thyme 6 cups water Heat olive oil in a large saucepan, and saute onion until transparent and lightly browned. Stir in 2 cups of corn kernels, potatoes and seasonings. Add 6 cups water and simmer 20-25 minutes. Remove from heat and let cool slightly. Then puree in a blender. Pour puree back into pot and add remaining 1 cup of whole corn kernels. Rewarm, if needed and serve. " Life is what happens to you, when you're busy making other plans.
