Maybe one day, right? Mexican Tofu Casserole 1 box of Spanish rice mix or make your own Spanish rice 1 14 1/2 ounce can tomatoes (I use Rotel or Mexican flavored) 1 pound can refried beans (vegetarian) 1 pound pkg. extra firm tofu, drain and press out water, chop 2 cups shreeded cheese, (jack & cheddar mix) or soy cheese 1 package taco seasoning (check ingredients) tortilla chips In a skillet add a little water and stir in taco seasoning mix, add chopped tofu and fry until mixed and hot. In a casserole dish cover the bottom with crunched tortilla chips (leave in a decent broken size). Warm the beans in a small sauce pan until smooth enough to spread. Now spread a layer of beans over tortilla chips, place tofu mixture over top, place rice over top, now cover with cheese and top with broken tortilla chip and bake for 20 minutes on 350. My mother inlaw mentioned today she was going to get some salsa, gaucmole (Sp?) and tortilla chips for Sunday. I mentioned this casserole and she loved the idea. Thanks again! Liz PS I know what you mean about the family. I'm at least lucky that I married into a family that is partially vegetarian. My family is still a meat and potato eating clan.
